We had the pleasure of spending an evening with Ed Matier who resides in Toronto while he visited his brother Tom and wife Mary at their tree house in Yellowpoint. Ed delighted us with an array of dishes taken from his 4th Cook Book in a series he calls “Edibles”. Ed will be our guest chef next May here at the Island Estuary where you will be treated to some of the most amazing food you can imagine. Food, Family and Friends – What better way to spend a beautiful summer evening. Ed prepared a wonderful feast for us using locally sourced ingredients including buffalo mozzarella, asparagus, free-range Cowichan Bay Chicken, fresh tomatoes and garden herbs. Mary set a magical table on the patio with soft lantern lighting so that we could enjoy good wine, good company and exceptional food. We love to make the most of our island living.

Hard to keep the riff raff out of the kitchen when the food smells so good.
What an incredible mix of flavours. This was just for starters, as we sat on the deck chatting with some excellent wine.

Yes folks, he really is this tall!!!!! I think he was being polite by not resting his beer on my head! What a great night this was. Michael Smith came to SAIT where I was enrolled in the Professional Cooking Program and asked for volunteers to assist with the Conservation Dinner night with Robert F. Kennedy. Of course, I leaped at the opportunity and had a blast. It was amazing to witness the “behind-the-scenes” of such a mammoth undertaking. We served over 300 guests – each course was carefully prepared and plated. Wow. What fun we had!!

Chef Michael Smith, Canada’s best-known chef is the winner of the James Beard Award for Cooking Show Excellence and host of Chef at Home, Chef at Large and The Inn Chef on Food Network Canada and in 26 other countries.
