Lemon Ricotta Pancakes with a touch of blueberry
Lemon Ricotta Pancakes
5 eggs separated
zest 1 large lemon
1 cup of milk
1.75 cup of ricotta cheese
1 cup all purpose flour
2.5 teaspoons baking powder
0.5 cup sugar
dash salt
Preheat pan or skillet on medium heat.
Mix the egg yolks. Sift and mix the dry ingredients and combine with the egg yolk, lemon zest, milk and ricotta cheese.
Beat egg whites until stiff. Gently fold into the egg-ricotta batter. Lightly butter pan and pour small sized cakes or large if you want bigger pancakes. Cook until bubbles form. Flip and cook other side until light golden color.
Serve with maple syrup, sour cream or fruit coulis.

The Waterfront Gallery is in a funky space down in the Ladysmith Harbour. The Island Estuary B & B is five minutes from the Gallery and centrally located to all the participating artists studios & galleries. Join us as we celebrate these gifted artists.
Our guests enjoyed a morning of conversation overlooking the estuary while feasting on spelt blueberry muffins, fresh strawberries with island farms yoghurt, free-range eggs over rosti potatoes and freshly roasted salt spring island coffee.

We love our local producers!!! We are so fortunate to have such abundance on this magnificient island. This morning we served cheeses from Hilary’s in the Cowichan Valley. We also use splet flour and red fife flours from True Grains bakery (right next door to Hilary’s) in our daily scones, muffins and breads that we serve at the Island Estuary Bed and Breakfast. We can also get kiwis – I know…. I could hardly believe it too!! But it is true!! They grow right here and are wonderful!! Strawberries, blackberries, raspberries,figs, apricots… it’s all here. Oh yes… I forgot to mention, the pottery dish holding this yummy fruit salad is from Mary Fox – an accomplished Ladysmith Potter. She has an amazing pottery sale in November each year where you can get deals like you wouldn’t believe. I bought a series of these mixing bowls that fit inside each other for $80.00 – it was a steal!! And when you are visiting Mary’s studio, drop by my other favourite, Jo-Vic Pottery Studio. His mugs make me very happy!! We will serve you the best locally roasted coffee from these fun mugs during your stay with us. Hope to see you soon.
